Your favorite chilled Champagne
or Spanish Cava served with a strawberry in each glass
HAM SANDWICHES
Made with home baked ham
(or a really good store bought one) on your favorite bread with mayo and
mango chutney. If you really want these to be extra special, make my mango
chutney sauce recipe.
MOM’S CLASSIC DEVILED
EGGS

Boil enough large fresh eggs
to serve the number of friends you are with.

I like to bring the eggs to
a boil, remove from the heat and cover for 20 minutes. They come out so
tender and the yokes are still clear yellow.

Shell and cut in half, length
wise, and scoop out yokes.

To yokes add some mayonnaise,
a little old fashioned yellow mustard, salt and freshly ground black pepper,
and some sweet pickle relish with a little pickle juice. The amounts are
up to you but you will want the mixture somewhat firm, not runny.

Re-stuff the eggs with the yoke
mixture and sprinkle with paprika and chopped parsley.
This is the recipe my mother
always served to our family and it is still a favorite of mine, but of
course, I just had to tweak it a little!
CLAY’S TWEAK
Leave out the pickle relish
and use capers and a little caper juice. My partner Dennis loves capers
and I think he would eat them on ice cream! Top each egg with a large caper,
and then sprinkle with paprika (no parsley). These never last when I serve
them to my friends and family, even mom liked them!
I also like to add about
½ teaspoon of Turmeric, it adds great color and flavor and is really
good for you. I always try to incorporate it into any recipes that it will
enhance!
FRUIT
And finally, serve some
freshly cut up seasonal fruits, Mango would be spectacular!!
