NOT YOUR GRANDMOTHER’S MATZO BALL SOUP

This is my version of matzo ball soup, I have taken quite a few liberties with this, but I think you will agree that it is delicious and soothing to the soul!

Fabulous, fragrant orange scented broth; it really enhances the flavor of the matzo balls!!! A meal in itself!

NOT YOUR GRANDMOTHER’S MATZO BALL SOUP
In loving memory of our dear friend Hannah
  • In a large pot, Sauté sliced onion, celery and garlic in olive oil till onion is transparent; add boneless, skinless chicken breast chunks and brown.
  • Grind some black pepper over and add a good splash of Grand Mariner, and flame.
Add:
  • Chicken broth, use the amount according to the amount of chicken – you want enough soup to float the matzo balls for cooking.
  • Salt 
  • Splash of Worcestershire
  • Poultry seasoning
  • ¼ cup ketchup
  • Sliced carrots
  • 1 tbsp. orange juice concentrate
  • Fresh, chopped rosemary
  • Cook, covered for 30 minutes
  • Add matzo balls (I use a mix) and cook till done.
